1 teaspoon salt
½ Pippin apple, peeled and grated
1 tablespoon chopped fresh mint leaves
2 scallions, finely chopped
6 slices of french bread
1 garlic clove, halved lengthwise
olive oil, to serve
pepper, to serve
1) Trim the zucchini, grate coarsely, and spread over a clean, dry dish towel. Sprinkle with the salt and set aside for 5 minutes. Wrap the dish towel around the zuchhini and squeeze to remove as much moisture as possible.
2) Transfer the zucchini to a large mixing bowl and stir in the apple, mint, and scallions.
3) Toast the bread slices lightly on both sides. Rub one side of each slice with the garlic halves.
4) Divide the zucchini mixture among the bread slices. Drizzle with a little olive oil and gring a little pepper over them before serving.
