2 fifteen oz cans of cannellini or garbanzo beans, drained and rinsed
2 fire roasted red peppers, lightly chopped
1/2 cup cilantro, or to taste
1/4 cup each of Chipotle, Persian Lime and Garlic Olive Oil, combine in jar and shake to mix
Salt and pepper to taste
Combine beans, roasted peppers, and cilantro in a food processor just until blended. Add oil slowly until hummus is smooth and creamy. Scrape into bowl and season with salt to taste.
Serve your hummus with flat squares of pita.
