Santa Fe Olive Oil Lemon Poppy Seed Cake

First, grease two loaf pans or one bundt pan and preheat oven to 350 degrees

Ingredients are as follows:
3 C flour
1 3/4 C sugar
1 tsp baking powder
1 tsp salt
3/4 C Santa Fe Olive Oil & Balsamic Company’s Meyer Lemon Olive Oil
6 large eggs or a cup of plain or vanilla yogurt
3/4 C milk
zest from 2 lemons
2 Tbsp poppy seed
Sift dry ingredients into a large mixing bowl. Add olive oil and mix. Add the eggs and beat at medium speed for 3 minutes. Add milk and lemon zest and beat for 10 minutes. Fold in the poppy seeds. Pour batter into pan(s) and bake for one hour. Make a glaze using the juice of two lemons and 1/3 C sugar boiled ‘til clear. Pour over warm cake.
