2 lbs of firm tofu
1/2 cup soy sauce
2 tbsp. fresh ginger root, minced
2 cloves garlic, minced
2tbsp. vinegar or lemon juice
1 medium onion, diced small
1/2 cup unbleached white flour
1/2 tsp salt
1/4 tsp black pepper
1/4 cup Santa Fe Olive Oil & Balsamic Company’s olive oil
Mix the soy sauce, honey, ginger root, garlic, vinegar or lemon juice and onion into a marinade.
Cut the tofu into 1/2 inch cutlets and let stand, covered, in marinade for two hours.
Mix the salt pepper and flour in medium mixing bowl, then dip the tofu slices into the mixture, covering both sides.
brown the floured slices in about 1/2 inch of hot oil on both sides. Reduce heat, pour in reserved marinade and let simmer on low heat for about ten minutes.

Marinade: 2 hrs.
