White Coconut Balsamic Pineapple Pancakes

Ingredients

Glaze
2 cups Santa Fe Olive Oil & Balsamic Company’s White Coconut balsamic
½ cup brown sugar

To prepare glaze
Mix balsamic vinegar with brown sugar in a saucepan over medium heat, stirring constantly until sugar has dissolved. Bring to a boil, reduce heat to low, and simmer until glaze is reduced by half, about 20 minutes. Glaze should coat the back of a spoon. Let cool and pour into a jar with a lid; store in refrigerator.
Makes 1 cup

Pancakes
2 cups all purpose flour
2 tablespoons brown sugar
1 tablespoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
2 eggs, slightly beaten
1 20 ounce can crushed pineapple (juice pack)
3/4 cup milk
1/4 cup butter, melted
