Unlike industrial pastas, many of Marella's cuts are handcrafted using traditional methods.  The dough is extruded through bronze dies and then air dried at low temperature.  The result is a flavorful pasta which expands when cooked, maintains its beautiful shape, and is ideal for holding sauce.
