Ingredients
1 1/2 to 2 pounds thin asparagus, bottoms trimmed
1 1/2 tablespoons Santa Fe Olive Oil & Balsamic company’s olive oil
2 tablespoons toasted sesame seeds
1 tablespoon toasted sesame oil
Preparation
1. Preheat the oven to 450 degrees F. Cut the asparagus diagonally into 2 inch pieces and pace in a bowl. Drizzle with the olive oil and season with salt and peper to taste. Toss to coat, then spread on a baking sheet in a single layer
2. Roast the asparagus until just tender, 6 to 8 minutes, depending on the thickness
3. Transfer to a bowl, sprinkle with the sesame seeds, and drizzle with the sesame oil. Toss to coat and serve hot.
