CARAMELIZED BRUSSELS SPROUTS

1lb Fresh Brussel Sprouts ½ Yellow Onion 3 Cloves fresh Garlic 4 Slices of peppered bacon Santa Fe Blend Extra Virgin Olive Oil Santa Fe Fig Balsamic Pink Salt to taste   In a medium saucepan add 1/3 C. Olive Oil. Turn heat to medium and add chopped bacon, garlic and onion. Sautee for 15 minutes. Add chopped brussel sprouts and keep cooking until caramelized. About 20 minutes Finish with a drizzle of Fig Balsamic.

Preheat Oven to 375 Ingredients: 1/3 Cup Santa Fe Red Chile Olive Oil 1/3 Cup Santa Fe Extra Virgin Olive Oil 4 Fresh Salmon Filet’s Make a dry rub from: Pink Salt, Ground Chipotle, Ground Red Pepper or Gound Ancho Chile Powder, Cumin, Garlic Powder, 2 tbsp. Brown Sugar, Red Pepper Flakes Rub Salmon with the above Ingredients: Heat oil in pan.. Sautee on medium heat with flesh side down. Cook for several minutes until golden and caramelized. Turn fish and put in preheated oven for 8 minutes. Drizzle at the last with Red Chile Oil.
