Olive Oil Crostini with Bacon and Caramelized Onions

This is a great recipe for fast entertaining friends or for a delightful appetizer. The fresh artisanal baguette is brushed with Santa Fe Olive Oil & Balsamic Co Olive oil, and rubbed with fresh garlic cloves for a delightful touch of flavor. This crostini is the perfect pairing with the sweet and savory pairing of smoked bacon, caramelized onions, and sweet balsamic.

 Ingredients: 

1 Large Baguette cut into small slices

1/3 cup Santa Fe Olive Oil

1 Vidalia onion

3 Garlic cloves cut in half

½ lb. bacon

25 Star Balsamic Vinegar to drizzle

Fresh racked pepper

Smoked Seal Salt to taste

 Directions: 

  1. Heat oven to Broil
  2. Chop Vidalia onion and bacon into small bits
  3. In a Sautee pan add bacon and onion until onion is caramelized and bacon is cooked through, add salt and pepper to taste.
  4. On a baking pan, lay out baguette slices, and brush each one with olive oil
  5. Place in oven to broil for a few minutes until golden
  6. Take from oven and rub each slice with fresh garlic clove
  7. Finally top with onion and bacon mixture, drizzle with balsamic and enjoy!
