6 tablespoons of butter
1 tablespoon olive oil
1 red onion ( completely optional)
1/2 teaspoon ground allspice
1/4 teaspoon ground nutmeg
1 1/2 pounds red cabbage, thinly sliced
1 cup apricots fresh or frozen
1/4 cup Santa Fe Olive Oil & Balsamic Company’s balsamic vinegar of your choice
salt and pepper to taste
Begin by melting the butter in a heavy large pot over medium-high heat. Add onion, allspice, and nutmeg; toss for 1 minute. Next, add cabbage and apricots.
Saute until well coated, about 2 minutes.
Add apricot and balsamic vinegar.
Toss until juices are reduced to glaze and cabbage is crisp-tender, this will take about 6 minutes. Season to your liking with salt and pepper.
