Lucky for us, frying isn’t considered harmful when eating vegetarian and using olive oil. And it’s delicious!
Start an assembly line of bowls full of
1. olive oil
2. bread crumbs
3. parmesan cheese
Next, coat your zucchini slices one by one through the assembly line.
Next, cover the bottom surface of a frying pan with olive oil. Heat on medium until hot. Toss the coated zucchini’s in the hot oil. Once brown on underside (takes about 2-3 min) flip over and brown the other side. Place finished zucchinis on a plate covered with a paper towel to help absorb excess oil. Continue to add oil as needed until all zucchinis have been fried. Add a little basil for garnish and serve.
